Time: 45 minutes

Serves: 4-6

  • 2lbs firm heirloom tomatoes, mixed color and variety
  • 2 medium onions
  • 1 quart apple cider vinegar
  • 1 cup sugar
  • 1 1-inch piece of ginger, grated
  • 1 tablespoon dry mustard
  • 1 tablespoon turmeric
  • 3 tablespoons mustard seeds
  • 3 tablespoons celery seed
  • 1 1/2 tablespoons pickling spice

HEIRLOOM TOMATO CHOW CHOW

Recipe courtesy Tyler Florence 072109-tyler_florence_tuesday Combine vinegar, sugar, dry mustard, ginger, salt and turmeric in a large pot and bring to a boil.  Simmer for 15 minutes to extract the flavors of the spices and once it is boiling and steaming add tomatoes and onion.  Gently toss to coat everything and simmer for 5 minutes.  Shut off heat and allow to come down to room temperature.
