Time: 15 minutes

Serves: Makes 2 1/2 cups sauce

  • 1/2 cantaloupe, peeled and cut in small pieces
  • 1/2 cup crème fraîche
  • Juice of 1 lime
  • Freshly ground black pepper
  • 24 oysters
  • 1/2 bunch fresh chives, minced
  • 1 ounce osetra or sevruga caviar

Raw Oysters with Melon-Crème Fraîche Caviar

Recipe courtesy Tyler Florence app-oyester_01 Puree the cantaloupe, crème fraiche, lime juice, and pepper in a blender until smooth. Shuck the oysters. Spoon about 1 teaspoon of sauce on each oyster. Garnish with the chives and caviar. Sultry!
