Waffle Mix
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/4 cup sugar
  • 3 whole eggs
  • 2 cups buttermilk
  • 2 tablespoons unsalted butter
  • non-stick spray, for waffle iron
BACON, ROASTED PEACHES
  • 12 slices of Applewood smoked bacon
  • 4 medium peaches
  • 2 tablespoons butter
  • 1/4 cup light brown sugar
  • extra-virgin olive oil
  • kosher salt and freshly ground black pepper
  • 1 cup maple syrup

BREAKFAST WAFFLES WITH APPLEWOOD SMOKED BACON, ROASTED PEACHES AND MAPLE SYRUP

Recipe courtesy Tyler Florence Preheat waffle iron according to manufacturer's directions.  Combine dry ingredients in a blender and turn on.  Add milk and eggs and blend until you have a smooth batter. Allow to rest for 10 minutes in the refrigerator before using. Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations.  Close iron top and cook until the waffle is golden on both sides and is easily removed from iron.  Serve immediately or keep warm in the oven until ready to serve. 12 slices of Applewood smoked bacon 4 medium peaches 2 tablespoons butter 1/4 cup light brown sugar extra-virgin olive oil kosher salt and freshly ground black pepper 1 cup maple syrup Preheat oven to 400 degrees F.  Line a roasting tray with parchment paper.  Lay the slices of bacon out in a single flat layer and sprinkle with a little brown sugar.  Lay each peach half, cut-side up, on the tray and top each with a little butter. and some of the brown sugar.  Roast for approximately 20 minutes.  The peaches should be fork-tender and slightly caramelized on the top and the bacon crispy and golden.  Serve with waffles and a drizzle of maple syrup.
