Preheat waffle iron according to manufacturer’s directions.¬† Combine dry ingredients in a blender and turn on.¬† Add milk and eggs and blend until you have a smooth batter. Allow to rest for 10 minutes in the refrigerator before using.
Ladle the recommended amount of waffle batter onto the iron according to the manufacturer’s recommendations.¬† Close iron top and cook until the waffle is golden on both sides and is easily removed from iron.¬† Serve immediately or keep warm in the oven until ready to serve.
12 slices of Applewood smoked bacon
4 medium peaches
2 tablespoons butter
1/4 cup light brown sugar
extra-virgin olive oil
kosher salt and freshly ground black pepper
1 cup maple syrup
Preheat oven to 400 degrees F.¬† Line a roasting tray with parchment paper.¬† Lay the slices of bacon out in a single flat layer and sprinkle with a little brown sugar.¬† Lay each peach half, cut-side up, on the tray and top each with a little butter. and some of the brown sugar.¬† Roast for approximately 20 minutes.¬† The peaches should be fork-tender and slightly caramelized on the top and the bacon crispy and golden.¬† Serve with waffles and a drizzle of maple syrup.
