Serves: 2-4

  • 2 lbs large shrimp, head and tail on
  • 4 (12oz) bottles lager beer
  • 1 tablespoon cider vinegar
  • 1/2 lemon
  • 1 head of garlic, split through the equator
  • 3 bay leaves
  • 2 sprigs of thyme
  • 1/2 tablespoon black mustard seeds
  • 2 dried red chiles
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon sugar

STEAMED SHRIMP WITH LAGER, LEMON AND THYME

Recipe courtesy Tyler Florence 061209-tyler_shrimp Begin by making the court bouillon.  Add all the ingredients except the shrimp to a large pot and bring to a boil.  Reduce heat and simmer for 10 minutes to allow the flavors to come together.  Add shrimp, bring back to a boil then immediately shut off the heat and let them steam in the court bouillon.  Once they have turned completely pink, about 12-15 minutes, strain and serve.
