  • 1 1/2 cups all-purpose flour
  • pinch kosher salt
  • 3 large eggs
  • 1 1/2 cups milk, room temperature

  • 1/2 cup water

Preheat the oven to 425 degrees F.

Melt butter over low heat.  Grease 12 popover pans and place in the oven to heat up while you make the batter.  Whisk flour, salt, eggs, milk and melted butter together until smooth and shiny – about 2-3 minutes.  Fill the popover pans halfway and bake for 30 minutes until they are puffed up and golden.

While the popovers are baking make the caramel.  Mix sugar and water together in a large saucepan and set over high heat.  When sugar melts and starts to take on a golden brown color remove from heat.  Working quickly, use two forks to roll the popovers in the caramel and set on parchment paper to set.
