SPICY TUNA ROLLS WITH SESAME CUCUMBERS
Yield: serves 4
Time: 18 minutes
Sesame Cucumbers:
1 hothouse cucumber, sliced
2 tablespoons toasted sesame oil
1 1/2 teaspoons sesame seeds, toasted
2 tablespoons fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
Spicy Tuna Rolls:
1/2 pound sushi-grade tuna
3 tablespoons mayonnaise
1 teaspoon hot chile paste, such as sambal
2 teaspoons sesame seeds, toasted
1/4 teaspoon toasted sesame oil
2 teaspoons fresh lemon juice
2 sheets of nori
sprouts for garnish

First make the cucumber salad. Toss together the cucumber slices, sesame oil, sesame seeds, lemonjuice, salt, and red pepper flakes in a bowl. Â Set it aside so that the cucumber has time to absorb the flavors of the marinade.

Cube the tuna and put it into a medium bowl. Â Add the mayonnaise, chile paste, sesame seeds, sesame oil, and lemon juice and gently fold together.

To assemble the rolls, cut each nori sheet into 4 squares. Â Put one square on your cuting board but turn it so that it looks like a diamond, with the points at top and bottom. Â put a spoonfulof tuna in the center and spread it out so that it covers the middle third of the diamond, running from top to bottom points.

Top with a few radish sprouts.  Fold the left side over and then the right, like you’re folding a burrito, and seal the nori with a dab of water.

Repeat to make 8 tuna rolls. Â Serve with sesame cucumbers and eat immediately.

This was great. I did have to add more sambal as i really like the spicy kick. I used peruvian cucumbers. great hit
Tyler,
As a young business professional in college you have taught me to not only cook, but to cook things you love. You have intrigued me with your elaborate recipes that not only impress my family but friends. I am constantly cooking out of your books and blogs on a weekly basis. Thanks for the great recipes and keep them coming. Hopefully I can make it out to the Shop one day and check everything out.
Again Thank you,
Alex Bagwell
Hi Tyler,
Very exciting about all of the new developments! I have tried to email you through your website, but it won’t work because it goes straight to mac mail, which I don’t have- I can’t see the actual address. I am looking for a cooking show to intern with, and love your style and philosophy in the kitchen. I’ve been cooking since I was a kid, and professionally as well, and feel like I have something to share. Any information would be hugely helpful!
Thanks so much!
Simone
